The Famous General Tso’s Chicken Recipe

Today we are going to do the famous General Tso’s Chicken. The dish is named after Tso Sung Tang, a Qing dynasty politician. However, I bet he never tried this dish because it’s this dish was invented in New York by a Chinese immigrant.

 

 

Chicken marinade
1/2 of an egg white
A pinch of salt
A pinch of pepper
A pinch of sugar
A tablespoon of corn starch & a tablespoon of water

 

Sauce
1 tablespoon of oyster sauce
1 tablespoon of soy sauce
1 tablespoon shaoxing wine
1 tablespoon white vinegar
2 tablespoons of sugar
A pinch of pepper
1 tablespoon of corn starch and 4 tablespoons of water 2 tablespoons of oil

 

Batter
1 cup of sweet potato starch
1 egg
A pinch of salt
1 teaspoon of baking soda
4 tablespoons of oil
4 tablespoons of water

 

To marinate the chicken, in a big bowl, add 1/2 of an egg white, a pinch of salt, a pinch of pepper, a pinch of sugar, a tablespoon of corn starch & a tablespoon of water. Mix well. Then add 8 ounces of chicken cubes. Mix again and marinate for 30 minutes.

 

To make the sauce, in a small bowl, add 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 tablespoon shaoxing wine, 1 tablespoon white vinegar, 2 tablespoons of sugar, a pinch of pepper, 1 tablespoon of corn starch and 4 tablespoons of water, 2 tablespoons of oil. Combine.

Now let’s make the batter! (If you’ve been following my episodes for a while, you probably realize that this is my first time frying chicken. So In order to provide you with the best recipe, I went to my Shifu and asked for his secret batter recipe. Then I tested it with corn starch, potato starch, and sweet potato starch just to see what the outcomes would be. To be honest, I like sweet potato starch the best because it’s the most crispy one。) Alright, so in a big bowl, add 1 cup of sweet potato starch, 1 egg, a pinch of salt, 1 teaspoon of baking soda (Here I also tried two different versions –not adding baking soda vs. adding baking soda. The one that I didn’t add baking soda, the batter turned out to be harder. The one that I added baking soda turned out to be airy, light, and crispy, Yep! So we are going to use baking soda in our recipe! ) Then we also going to add 4 tablespoons of oil, 4 tablespoons of water. Mix until combine. Then add the chicken pieces into the batter.

 

In a pot, add about 2 quarts of vegetable oil. Fry the chicken at 350F for about 5 minutes until golden brown. Take the chicken out. Then turn up the heat until the oil is at 375F. Put back chicken. We are using double frying method to make the chicken even crispier. Now take out the chicken and put on a paper towel.

 

In a pan, add 2 tablespoons of chili oil, 2 cloves of chopped garlic, 2 stalks of chopped scallions, 4 dried chilies and wait until the spiciness aroma comes out. Pour in the sauce and wait until thicken. Then add the fried chicken. Stir until combine. Well done!
